What we’re about…

There is a shared passion for what we do and a shared hunger to learn from the people we encounter.  You wont find any ‘Gurus’ at umami and that’s mainly because we feel it’s a limited stance towards bringing out the best in people and that includes ourselves.  That’s not to say also that our trainers lack any ‘Guru’ qualities but more in terms of their own abilities to question their own assumptions, challenge their own ideas and not take anything for granted other that ‘learning is constant’…

So what else is umami?

Taking its name from the Japanese, umami is a pleasant savoury taste which occurs naturally in many foods, including meat, fish, vegetables and dairy products.  The taste of umami itself is extremely subtle whilst blending well with other tastes to expand and ’round out’ certain flavors. Most people don’t even recognize umami when they encounter it… However, it plays an important role making things taste delicious.

‘ Acceptability’ and ‘ UMAMI ’ When humans consume, they use all of their senses (sight, hearing, smell, touch and taste) thus creating general judgments about what they take in, and it is taste that can be the most influential in determining how delicious something is. Conventionally, it has been thought that our sense of taste was comprised of four basic, or ‘primary’, tastes, which cannot be replicated by mixing together any of the other primaries: sweet, sour, salt and bitter…

However, it is now becoming a well known fact that there is actually a fifth, primary taste… umami…
